Daniel Karlsson is the co-owner, founder and baker of Bageriet London. Originally from Sweden, where he trained as a Konditor, Daniel moved to London to work for Ottolenghi and Melrose & Morgan before deciding to set up his own Swedish bakery and shop in Covent Garden – described by Grace Dent in the Evening Standard as: ‘tiny (about eight seats), fragrant and rather perfect.’ Producing exquisite cakes, pastries and breads, Daniel’s inspiration comes not from top chefs and patissiers but from his mother and grandmothers.
